A custom dating back to the 15th century, the wedding cake was a symbol of fertility and prosperity, in fact during the 19th century, couples would save the top tier of their wedding cake for the christening of their first child. But with tiers, toppers, layers and more, just what is the future of a tradition that is becoming bigger, bolder and more extravagant than ever…

It is often said that baking is a science, but with words such as “hand-painted”, “geometric” and “mosaic” becoming increasingly popular when describing wedding cakes and the appearance of techniques such as pressing and crystallising edible flowers, the future of the wedding cakes is certainly heading away from simplistic culinary and more towards being works of art.
But it’s not just elaborate designs, that are breathing new life into this old tradition, what wedding cakes of actually made of is becoming increasingly diverse. Approximately 20% of the UK have food allergies including dairy products, wheat, eggs and nuts, which of course can be problematic when it comes to wedding cakes, as traditional recipes contain many, if not all, of these ingredients.
In fact according to some bakers, traditional fruit cakes are less frequently ordered, with many couples opting for ‘plant-based’ recipes, not only to accommodate the dietary needs of their guests but also for nutritional and environmental reasons.

It is also becoming increasingly popular for couples to move away from cake altogether, one of the biggest wedding cake trends of the last decade was the “cheesecake”. Yep!! Whole cakes made entirely out of cheese, perfectly garnished with figs, grapes and chutneys. Doughnut Towers are also becoming a prefered choice amongst couples looking for an “alternative” wedding cake.
